Berry Oat Breakfast Bars

Gluten-free

3c oats (use gluten-free oats if needed)
1c Battenkill Brittle Crumble
2 tsp baking powder
2 tsp cinnamon
1 tsp kosher salt
2 eggs
¾ c vanilla or plain soy, coconut or almond milk
¾ c maple syrup
¼ c lemon juice
Lemon zest (optional)
Berries (fresh or frozen)

Preheat oven to 375 degrees. Combine dry ingredients in 9×12 baking pan. Mix together wet ingredients. Pour wet ingredients over dry. Use spoon or spatula to make sure that wet is evenly distributed. Spread berries on top and press down a bit with spoon. Bake for 35 minutes

Battenkill Brittle recipes

Zucchini Bread or Muffins

2c grated zucchini
1/4c vegetable oil
1/2c maple syrup
2 eggs
1t vanilla
2c whole wheat pastry flour
1/2c Battenkill Brittle Crumble
2t baking powder
1/2t baking soda
1/2t cinnamon
Battenkill Brittle Crumble for topping

Preheat oven to 350. Mix together wet ingredients. In separate bowl, mix dry ingredients. Slowly add dry to wet. Pour into greased loaf pan or muffin tins. Top with Battenkill Brittle Crumble. Bake bread for 1 hour, muffins for 40 min.

Apple or Fruit Crisp

Gluten and dairy free

6 peeled and sliced apples or 4 cups of fresh or frozen berries or peaches
2 Tbsp maple syrup
1 tsp cinnamon
Topping:
1 cup Battenkill Brittle Crumble
½ cup oats
2 Tbsp. maple syrup
2 Tbsp. canola oil

Preheat oven to 375. Mix fruit with maple syrup &amp cinnamon. Place into a 10” square baking pan. Mix together topping and spread on top of fruit. Bake at 375 for 25 min. Top with vanilla ice cream or eat for breakfast!

Applesauce Muffins

Almost sugar-free! The only sweetener is in Crumble.

1 1/2c applesauce
3 eggs
1/2 tsp vanilla
1/3c canola oil
1 1/2c whole wheat pastry flour
3/4c Battenkill Brittle Crumble + extra for topping
1 1/2 tsp baking powder
3/4 tsp baking soda
3/4 tsp salt
1 1/2 tsp cinnamon

Preheat oven to 350. Mix together wet ingredients. Add dry. Pour into muffin tins. Top with extra Crumble. Bake for 20 minutes.
